Wylde: English Sparkling Wine Made to Be Opened Now

There’s a version of English sparkling wine that requires an occasion. You save it. You plan around it. There’s usually a speech involved.

Wylde is the other version.

We planted Everflyht in the chalk and clay of the South Downs in 2016, and for a long time our focus was traditional method wines. The kind that earn their reputation slowly, bottle by bottle, year by year. We’re proud of those wines. But we kept coming back to a question: what about the other moments? The Tuesday evening, the long lunch that drifted past three o’clock, the gathering that didn’t need a label to feel special?

That’s what Wylde is for.

A Different Method, a Different Mood

Wylde is made using the Charmat method, the same process behind prosecco. Rather than undergoing its second fermentation in individual bottles, the wine spends its time in large pressurised steel tanks. The result is a wine that’s brighter, fresher and more immediate than our traditional sparkling. More fruit at the front. Lively aromatics. The kind of character that suits a glass rather than a ritual.

The blend draws on four varieties grown here at the estate: pinot noir, pinot meunier, pinot gris and chardonnay. Luke Spalding, who oversees the running of Everflyht and worked with us to develop this wine, describes it as “playful yet premium.” That’s exactly right.

Why We Made It

English sparkling wine has rightly earned a reputation for world-class wines. The traditional method wines coming out of Sussex, Kent and Hampshire have turned heads internationally, and that recognition is well deserved. But reputation and accessibility don’t always keep pace with each other.

We wanted to make a wine that worked on a restaurant’s by-the-glass list. Something a bar could pour with confidence, and a guest could order without overthinking. Wylde does that. It brings the quality and provenance of South Downs fruit into a format that suits relaxed, sociable occasions, and it does so at a price point that makes it easy to say yes to.

That matters to us. The estate takes its name from the six Martlets of the Sussex crest, birds said to never land. Always in flight. There’s something in that spirit behind Wylde too: a wine made to move, to travel, to be shared.
