Everflyht Duo
The 1st wine is the Everflyht Brut NV which reflects the current estates planting which combines Pinot Noir, Chardonnay and Meunier; hand-picked from our single estate vineyard and created in a low intervention method while using steel tanks and new and old oak to bring the best from each variety and block. Fresh and generous complexity in style, this traditional method wine has been aged for 20 months on the lees bringing a robust depth with a lasting elegance to the wine.
The 2nd wine is our Beautiful Rosé De Saignée 2020 which is a blend of Pinot Noir and Meunier; hand-picked from our single estate vineyard. The wine reflects our idea of field to bottle where the grapes are picked together and handcrafted in the winery. This produces a wine that tells the story of not just the vintage but of the varities as well. This traditional method wine has been aged on the lees for 18 months. The wine has an delicate coral pink colour and is complex in style with a fruit forward profile of ripe cherry and summer fruit with layers of patisserie notes running though the profile. The Rosé De Saignée 2020 is made up of 66% Pinot Noir and 34% Pinot Meunier.
