Rosé De Saignée 2020

Our next vintage Rosé de Saignée 2022 will not be released until April 2025, with such high demand for this wine from consumers, wine club members and trade we will be doing limited allocation. If you wish to secure an allocation and access to this wine please sign up to our Murmuration wine club. As a member you will be given access to this wine as well future wine releases, events and our limited library range that will be available in the coming years.

Tasting Notes

Everflyht Rosé de Saignée 2020 is a blend of Pinot Noir and Meunier; hand-picked from our single estate vineyard. The wine reflects our idea of field to bottle. The grapes are picked together and handcrafted in the winery to produce a wine that tells the story of not just the vintage but of the varieties as well. This traditional method wine has been aged on the lees for 20 months. The wine has a delicate coral pink colour and is complex in style with a fruit forward profile of ripe cherry and summer red fruit with layers of patisserie notes running through the profile.

VINTAGE

A roller-coaster of a season which ended on a high. A positive start with an early bud break and good consistent growth meant the inflorescence developed evenly across the vineyard. However, the vineyard was hit with a late freak frost event which led to the loss of around 15% of the inflorescence across pockets of the Chardonnay and Pinot Noir.
Flowering started in mid-June and was positive with warm bright days. July was cool which impacted the bunch development and lengthened the lag phase of the berry development.
Veraison was rapid due to a fantastic warm September that meant the fruit developed some beautiful complex ripe flavour profiles within the grapes as well as some fantastic deep red & black colour concentration in both the Pinot Noir and Meunier. These deep coloured skins and rich phenolic profile translated into our Rosé de Saignée 2020.

VINEYARD

Soil: Wealden Clay
Block Selection:  Grapes were selected from two blocks of the vineyard, the House Pinot Meunier block (rows 1-10) and the Oaks Pinot Noir block (rows 100-105)
Harvest Date: 5th October 2020

WINEMAKING

The Pinot Noir and Meunier were destemmed and co-macerated for 20 hours before being split between barrel and a steel tank and co fermented. The wine is made up 29% barrel and then aged for 8 months in Old Burgundy barrels (6th fill).

APPEARANCE
Star bright, coral pink with copper highlights.

NOSE
Opulent red fruit, aromas of cherry Bakewell tart and warming biscuit with wild strawberry and undertone of cassis, complexity and depth rounding off the profile.

PALATE
A precise backbone and bright acidity gives this wine an elegance and finesse. The structure is perfectly complemented with a mix of red summer fruits ripe red apple, and Bakewell Tart. The crisp acidity gives the wine structure and poise with an elegant well-balanced finish.

FOOD PAIRING
A complex wine that can stand up and complement a plethora of elegant food.
Pair with game, lobster ,crab, rare lamb, and succulent roast pork.
