Our second single estate sparkling wine to be produced at Everflyht.
Tasting Notes
The Everflyht Brut NV reflects the current estates planting which combines Pinot Noir, Chardonnay and Meunier; hand-picked from our single estate vineyard and created in a low intervention method while using steel tanks and new and old oak to bring the best from each varity and block. Fresh and generous complexity in style, this traditional method wine has been aged for 20 months on the lees bringing a robust depth with a lasting elegance to the wine.
The Brut Nv consists of 47 % Pinot Noir, 47 % Chardonnay, 6% Pinot Meunier with 24% Reserve Wine added before bottling.
The appearance is star bright, pale golden in colour and with fine consistent bubbles.
On the nose there are generous aromas of baked apple and red apple skin with bright lemon notes. Undertones of strawberry and raspberry are followed by complexity and depth rounding off the profile with fresh biscuit and baked shortbread.
The palate offers a precise backbone and bright acidity which give’s this wine an elegance and finesse. This structure is perfectly complemented by ripe red apple, pear and buttery lemon tart and a mix of red summer fruits. Bready brioche and hints of fresh biscuit form the profile edge.
Perfect for any occasion whether that be on its own or with canopés, fresh seafood or light game dishes.
