Tasting Notes

The Everflyht Brut NV reflects the current estates planting which combines Pinot Noir, Chardonnay and Meunier; Hand-picked from our single estate vineyard and created in a low intervention method while using steel new and old oak to bring the best from each variety and block. Fresh and generous complexity in style, this traditional method wine has been aged for a minimum of 20 months on the lees bringing a robust depth with a lasting elegance to the wine.

VINTAGE

A roller-coaster of a season which ended on a high. A positive start with an early bud break and good consistent growth meant the inflorescence developed evenly across the vineyard. However, the vineyard was hit with a late freak frost event which led to the loss of around 15% of the inflorescence across pockets of the Chardonnay and Pinot Noir.
Flowering started in mid-June and was positive with warm bright days. July was cool which impacted the bunch development and lengthened the lag phase of the berry development.
The onset of Veraison was rapid due to a fantastic warm September that meant the fruit developed some beautiful complex ripe flavour profiles within the grapes as well as some fantastic deep red & black colour concentration in both the Pinot Noir and Meunier and some fantastic stone fruit characters in the Chardonna leading to three busys days of harvest.

VINEYARD

Soil: Wealden Clay
Block Selection: Grapes were selected from four blocks of the vineyard, House Pinot Meunier block, House Chardonnay block, House Pinot Noir Block and Oaks Pinot Noir block
Harvest Date: 5th, 6th and 7th October 2020

WINEMAKING

Meunier was first into the winery where it was pressed and fermented followed by Pinot Noir on day two and then Chardonnay the day after that. The pressings were split between steel tanks, old and new French oak barrels. These barrels make up 12% of the total blend the wine. The wine was fermented in barrel and then aged for 10 months before blending in July 2021.

60% Chardonnay (Clones 76 & 95)
30% Pinot Noir (Clones 792, 114 & 375)
10% Pinot Meunier (Clone 865)
With 5% Reserve Wine added before bottling.

APPEARANCE

Star bright, pale golden in colour with a gold hue.
Fine consistent bubbles.

NOSE

Generous aromas of baked apple and red apple skin with bright lemon notes. Undertones of strawberry and raspberry are followed by complexity and depth rounding off the profile with fresh biscuit and baked shortbread.

PALATE

A precise backbone and bright acidity give’s this wine an elegance and finesse. This structure is perfectly complemented by ripe red apple, pear and buttery lemon tart and a mix of red summer fruits. Bready brioche and hints of fresh biscuit form the profile edge. The crisp acidity gives the wine structure and poise with an elegant well-balanced finish.
